Mexican Pizza

It was Friday Fiesta at our house, so serving Mexican Pizza to our friends seemed like the logical choice.  It's a fun twist on pizza and easy to make. Plus, it's muy delicioso!



Mexican Pizza
pizza crust (I use Udi's frozen pizza crust since my husband is gluten-free)
1 can chili beans
taco sauce
shredded cheese
shredded lettuce 
diced tomatoes 
sliced black olives

Blend chili beans in food processor.  If you are only making one pizza, you will have some bean mixture left over.  You can store in a container and use for tostados or burritos, or even a dip.  Spread bean mixture on pizza crust. Spread taco sauce on top of bean mixture.  Bake in oven as directed on pizza crust.  After taking out of oven, add cheese, lettuce, tomatoes, and olives. You can add other ingredients too, like jalapenos, avocado, cilantro, or peppers. Really, anything goes! Even a dollop of sour cream would taste great!


Here are the steps to make the bean mixture.
It always turns out creamy and smooth and has a zippy flavor.
I use this mixture on tostados and burritos too.

For our fiesta, I made three pizzas, cut them up and served them on a big platter, along with a big bowl of chips and homemade salsa.  The Mexican Pizza was a big hit!
