Veggie Soup

After all those decadent and delicious holiday meals, your body may be screaming for something healthful.  Here's a yummy soup packed with all kinds of nutritious vegetables.  It's full of fiber and antioxidants.  It will surely give you a healthy kick start for the new year. 



Here's what you'll need:
1 medium white onion (about 1 cup), chopped
1 cup celery, chopped
1 tablespoon extra virgin olive oil
1/2 cup red pepper, chopped
1/2 cup green pepper, chopped
1 teaspoon minced garlic
1 container chicken stock (32 ounces)
1 cup carrots, sliced or chopped
2 cups zucchini, cut into small pieces
2 cups yellow squash, cut into small pieces
2 can V8 juice
1 can diced tomatoes with juice
1 can red kidney beans, rinsed and drained
1 can black beans, rinsed and drained
3 cups sliced mushrooms
1 tablespoon Italian Seasoning
Salt
Pepper

Makes a about 8 servings.



If you want to make it a little spicier, add one of these for a kick!



Here's what to do:

Saute onions, celery, and peppers, and garlic in olive oil until tender.  



Add in carrots and about 1 cup of chicken broth.  Cook on medium heat for about 10 minutes.



Add in remaining chicken broth.

Continue cooking on medium heat.  Add in zucchini, squash, canned tomatoes, and V8 juice.



Add in kidney beans.

Add in black beans.

Add in mushrooms.

Cook on medium heat for about 30-40 minutes, or until vegetables are tender.



Serve and enjoy.  

You really can add any vegetable you'd like in this basic recipe.  If you want to make it vegetarian, just add vegetable stock instead of chicken stock.  You can add potatoes or noodles if you want to add in something extra.  If you add in potatoes, add them first.  They need a longer cooking time.  Really, anything goes!
